Ahmad wished for his son to follow tradition. But Moulay Driss chose purpose over obedience.
In 1941, he left Fez with roughened hands, a few secret family recipes, and a restless hunger — not just for food, but for meaning.
He arrived in Marrakech, the city of spice, soul, and stories. He labored in silence. Faced hunger. Endured humiliation. And worked long days under the burning sun.
In 1946, he lit the flame. A modest street stall in Bab Doukkala, Morocco. At the time, street grilling was
frowned upon — seen as lowly, even shameful.
But his food? It wasn’t just food. It was memory. It was Morocco — held in a single bite.

The stall was not the destination; it was only the beginning.
Moulay Driss became a wanderer. A seeker of flavors, of wisdom, of truth.
He climbed the Atlas Mountains. Dined with shepherds in Ouarzazate.
He cooked with his hands — but he learned with his heart.
Each dish he brought home was more than a recipe — it was a story. An echo of a place, a person, a moment.
And those echoes still live in our kitchen today.
A Father’s Wish, A Son’s Oath
Before he passed, Moulay Driss said to his son Khalid:
“Take care of your family. Take care of the house.
And may our food bring joy to families everywhere the same way it brought joy to ours.”
This was no simple wish. It was a sacred promise.
At 18, Khalid accepted the weight of that vow. He stepped into the fire. He raised his siblings. He protected the home.
And when the time came, he raised his sons Youssef and Hamza in that same enduring flame.
